Recently, my roommate discovered that she’s developed a gluten-allergy. In my humble opinion, that is the worst most-nightmarish fate there is. No gluten?! That’s actually torture. So to help ease her pain, (although she seems to be a lot more fine with it than I would ever be,) I’ve decided to start experimenting with some gluten-free recipes. They make me nervous, obviously baking with flour is easier. I was actually sure these cookies weren’t going to turn out, there was a lot of doubt throughout the process. But then they did! They were not only ridiculously easy to make, but were so delicious that both gluten-eaters and non-gluten eaters alike raved about them. So try these out whether you love flour in your desserts or not!
